Green Eggs and Ham and Chocolate

When we decided to move, I thought it would be quick, so I just started packing whatever was easy. That was about 75% of my books last September. This last week I brought them back out again. I was missing them.

Brooke is really ready to start reading now. For each of my children at this particular stage, I fall in love with Dr. Seuss. In particular, Green Eggs and Ham, which was packed away in one of eight book boxes.


I knew today was the day to bring it out, so I made her Green Eggs and Ham for breakfast.


Green Eggs and Ham

6 servings

Ingredients:
8 eggs
3/4 cups milk
handful of spinach leaves, fresh
1 cup cubed ham
1 T butter
2 oz. cheese, shredded


1. Heat skillet to medium heat. Melt butter in pan.

2. While butter is melting, put eggs, milk, and spinach in blender. Blend well.

3. Brown cubed ham in skillet for 1 minute.

4. Add egg mixture, cook.

5. When the eggs are about half way done, stir well. Then sprinkle the cheese on top, stir once more.

6. Take eggs off heat just before they are done. Eggs will continue to cook a little after taken off the heat.




We ate breakfast....and later read the book. She did soooo well. Everyone else I hurried into reading but this year I didn't have enough time to worry about it - and apparently that's okay!

Later today she came up to me and said, "Mom, really I don't like Green Eggs and Ham." ( I think it was the Gouda cheese, I'll try it again with cheddar.) I don't give up easy.

Tonight we were supposed to make Resurrection Cookies, but when I got the recipe out I realized that I needed three egg whites and I had used all but one egg for the breakfast, so I broke the news.

Savannah wouldn't have it. She had it in her mind that she was going to eat dessert tonight.

Although my outside remained calm, inside I was doing the happy dance when she found a recipe for "brownie pudding". She found it quickly, we had all the necessary ingredients, and she made it completely solo. She even cleaned up a little afterwards. And I got some outstanding chocolate dessert.  (Max didn't want his so I ate it too.)



There is one serving left for Daddy if he wants it. If not, I may have to wake up a little early and have brownie pudding breakfast....
